Go to Amazon Calla and right when u enter the main city go south-west to meet "a chef". Say "hi hydra egg" to collect your filets. You need 5 hydra eggs in order to collect 5 filets. You can find nests all over Amazon Calla. You can also loot hydra eggs from Hydras.
